On the palate, the wine is stony and mineral with lemon zest, fresh fennel, and smart taut intensity. The mineral backbone carries a long, refreshing finish. This is a perfect first wine of the day and drinks perfectly without accompaniment, but it could be something perfectly unexpected with freshly shucked oysters.
